Huevos Rancheros

Bereit für das genialste Frühstück, das ihr je gegessen habt? Kurz bevor wir nach München zogen, eröffnete ein kleines Café in Maxvorstadt mit dem Namen "LAX Eatery". Dort werden klassische Gerichte der mexikanisch-amerikanischen Küche neu interpretiert und in entspannter Atmosphäre hochklassig serviert. Bald haben die Münchener gemerkt, dass dieser kleine Laden einiges zu bieten hat. An den Wochenende ist die LAX Eatery deshalb sehr gut besucht und manchmal wartet man auch mal etwas länger auf ein Plätzchen. Dabei bin ich ja bekanntlich eher ungeduldig. So haben wir beschlossen uns selbst an unserer Leibspeise zu versuchen: Huevos Rancheros.

Ready for the best breakfast you ever had? A little café called "LAX Eatery" opened in Maxvorstadt shortly before we moved to Munich. In relaxed atmosphere they serve their very own interpretation of typical American-Mexican dishes. Soon the people in Munich noticed that this place has a lot to offer so that on weekends it tends to be a little bit crowded. One day, instead of waiting, we tried our favorite dish at home: Huevos Rancheros.


Zutaten 
(für 3 Portionen)

1 Schalotte
1 Knoblauchzehe
1 EL Olivenöl
1 Dose Kidneybohnen
150 ml Gemüsebrühe
1 Avocado
Zitronensaft
3 Weizentortillas
1/2 Packung geriebener Mozarella / oder 50 g Cheddar (am Stück)
6 Eier
1/2 Becher Crème fraîche

1 shallot
1 garlic clove
1 tbs olive oil  
1 can of kidney beans
150 ml vegetable broth
1 avocado
lemon juice
3 tortillas
1/2 package of granted mozzarella cheese / or 50g of cheddar 
6 eggs
1/2 cup of crème fraîche
 

Schalotte und Knoblauchzehe in kleine Würfel schneiden. Die Hälfte der Schalotten und den Knoblauch in einer Pfanne mit dem Olivenöl anbraten, dann die Bohnen dazugeben. Bohnen mit einer Gabel etwas andrücken. Ein wenig Gemüsebrühe dazugeben bis sie verkocht ist. Ähnlich wie bei einem Risotto die Bohnen immer feucht halten bis sie eine cremige Konsistenz erreichen, sie dazu gerne noch etwas "quetschen". In der Zwischenzeit die Avocado aushöhlen und mit einer Gabel in einer Schüssel zerdrücken, die restlichen Schalotten und etwas Zitronensaft untermischen. 

Cut the shallot and the garlic into small cubes. Stir-fry half of the shallots and the garlic with the olive oil. Add the beans and crush them slightly with a fork. Pour a little bit of the broth into the pan, the beans should be kept moist all the time. They're perfect when they've reached a creamy texture, to achieve that you add broth and let it boil away a few times. Squeeze the beans a little bit more and voila. In the meantime hollow out the avocado, mix in the remaining shallots and a little bit of lemon juice. 

 

Weizentortilla in die Pfanne geben, eine Hälfte mit Käse bedecken, dann zuklappen. Wir kaufen normalerweise Cheddar am Stück und reiben ihn für die Quessadilla frisch, aber diesmal hatte der Supermarkt unsereres Vertrauens keinen Cheddar, deshalb gab es geriebenen Mozzarella. Ich hab schon öfter drüber nachgedacht unsere Lebensmittel mal online zu bestellen (z.B. beim Rewe Lieferdienst oder Allyouneed Fresh), das wäre vielleicht entspannter als im Supermarkt ahnungslos vor dem Regal nach alternativen Produkten zu suchen, wenn es mal etwas nicht gibt. (Habt ihr damit schon Erfahrungen gemacht?) Tortilla auf beiden Seiten anbraten bis der Käse geschmolzen ist.

Put the tortilla in a pan and cover half of it with cheese. Fold it and brown it from both sides until the cheese is melted. Usually we buy a piece of cheddar and grate it, but this time we used already grated mozzarella cheese because cheddar wasn't in stock. I thought about ordering our food online (via REWE Lieferdiest or Allyouneed Fresh) to avoid the stress of searching for an alternative when a product is not available. Have you tried it?


Zuletzt die Spiegeleier anbraten. Tortillas auf einen Teller geben, Spiegeleier drauflegen und schließlich noch Guacamole und Crème fraîche dazugeben. 

Fry the eggs and place them on a plate on top of the tortillas. Top everything with guacamole and crème fraîche.


Wenn ihr hochmotiviert seid, macht ihr noch Pico de Gallo - eine mexikanische Salsa - dazu. Die gehört eigentlich auch zu ordentlichen LAX Eatery Huevos Rancheros.

If you have a bit more time, you can prepare pico de gallo (= Mexican salsa) as well. It goes really well with LAX Eatery huevos rancheros.


Esst schnell, solange der Käse noch geschmolzen und die Eier warm sind. Unsere Huevos Rancheros waren schon sehr, sehr lecker. Aber wir werden es uns nicht nehmen lassen der LAX Eatery immer wieder mal einen Besuch abzustatten, denn bis wir an deren Huevos rankommen, braucht es noch einiges an Übung. 

Eat quickly as long as the cheese is still melted and the eggs are warm. Our Huevos Rancheros were really good. But we'll keep visiting the LAX Eatery until we have more experience and our huevos are as good as theirs.

  2. Ich bin ja gar kein Frühstücksmensch... muss schon immer schauen, dass ich den Kampf mit meiner Schüssel Müsli schaffe. ;)
